HONEY

At Scovaventi, our honey is only extracted from hives located on our own lands, nestled in an unspoilt area in the heart of the Maremma forests. We only use natural beekeeping methods which guarantee the longevity of our bee population without stressing them in any way.

The lush flora that grows in our farm – where the typical plants of the Mediterranean scrub (juniper, broom, Jerusalem thorn, bramble, spurge, rock rose, rosemary, thyme, laurel, strawberry tree) grow alongside tall trees (oak, cork oak, English oak, manna ash, holm oak, carob, chestnut), olive groves, citrus orchards, gardens full of flowers (including tropical ones) – gives our honey its unique quality characteristics, from its strong aromatic profiles to its range of delicate, creamy flavours.

Its rich amber colour is due to the hives being located near the forest and to the abundance of minerals and antioxidants associated in particular with the presence of honeydew and chestnut trees: all elements that favour a slow crystallisation process.

The honey is cold extracted to retain the fine scents of its essences and to preserve all its enzymes, vitamins and antioxidants.

From a nutritional standpoint, the presence of pollens from many different types of flowers gives our millefiori honey a more complete organoleptic profile than honey made from a single flower.
