ARTICHOKES “IN PINZIMONIO”
For the preparation of our crudités we use only artichokes of the Violetto di Toscana variety. To preserve the quality, the harvest takes place in the morning, in the cool hours and when the artichoke is still very small. The artichokes are then finely chopped and, still raw, they are immersed in lemon juice and in our organic extra virgin olive oil so as to maintain the colour and the intense taste they had at harvest.
Ingrediens: Violetto di Toscana artichoke, extra virgin olive oil, salt, lemon, pepper.
